Sheet Pan Herb-Roasted Salmon with Cherry Tomatoes

  1. Step 1: Preheat oven to 425°F. Line a baking sheet with parchment paper. Place salmon skin-side down on the sheet.
  2. Step 2: Drizzle salmon with 1 tbsp olive oil and sprinkle with 1/2 tsp salt, 1/4 tsp black pepper, minced garlic, and 1/2 tsp dried oregano.
  3. Step 3: Arrange cherry tomatoes around salmon and drizzle with remaining 1 tbsp olive oil. Top with lemon slices and half the fresh dill.
  4. Step 4: Roast for 12-15 minutes until salmon flakes easily with a fork and tomatoes are blistered.
  5. Step 5: While salmon cooks, whisk together lemon juice, 1 tbsp avocado oil, and remaining dill in a small bowl. Serve salmon with tomatoes and drizzle with sauce.
