Sheet Pan Herb-Roasted Salmon with Cherry Tomatoes
Salmon fillets roasted with cherry tomatoes and fresh herbs until flaky, served with a light lemon-dill sauce for a simple, elegant dinner.

Ingredients
- 4 (6 oz each, skin-on) salmon fillets
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 2 tbsp chopped fresh dill
- 1, thinly sliced lemon
- 3 minced garlic cloves
- 1 tsp dried oregano
- 1 tbsp lemon juice
- 1 tbsp avocado oil
Instructions
- Step 1: Preheat oven to 425°F. Line a baking sheet with parchment paper. Place salmon skin-side down on the sheet.
- Step 2: Drizzle salmon with 1 tbsp olive oil and sprinkle with 1/2 tsp salt, 1/4 tsp black pepper, minced garlic, and 1/2 tsp dried oregano.
- Step 3: Arrange cherry tomatoes around salmon and drizzle with remaining 1 tbsp olive oil. Top with lemon slices and half the fresh dill.
- Step 4: Roast for 12-15 minutes until salmon flakes easily with a fork and tomatoes are blistered.
- Step 5: While salmon cooks, whisk together lemon juice, 1 tbsp avocado oil, and remaining dill in a small bowl. Serve salmon with tomatoes and drizzle with sauce.
