Sheet Pan Lemon-Garlic Chicken with Roasted Cherry Tomatoes

Ingredients
- 1.5 lbs chicken thighs
- 2 cups cherry tomatoes
- 1 lemon
- 4 garlic cloves
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Place 1.5 lbs bone-in, skin-on chicken thighs, skin-side up, on a parchment-lined baking sheet. Season both sides with 1/4 tsp salt, 1/8 tsp black pepper, and 1/2 tsp dried oregano.
- Step 2: Scatter 2 cups cherry tomatoes and 4 minced garlic cloves around the chicken. Drizzle with 2 tbsp olive oil, squeeze juice from 1 lemon (about 1 tbsp), and sprinkle with remaining 1/4 tsp salt, 1/8 tsp black pepper, and 1/2 tsp dried oregano.
- Step 3: Roast for 25-30 minutes until chicken is golden brown and cooked through (internal temperature 165°F), stirring tomatoes gently after 15 minutes.
