Shrimp Sofrito with Caramelized Plantain

Ingredients
- 1 lb, peeled and deveined shrimp
- 3 tbsp olive oil
- 1 large, finely chopped onion
- 3, minced garlic cloves
- 1, finely chopped green bell pepper
- 1, finely chopped tomato
- 1/4 cup, chopped cilantro
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large, sliced into 1/2-inch rounds ripe plantains
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 chopped onion, 3 minced garlic cloves, 1 chopped green bell pepper, and 1 chopped tomato. Sauté for 8-10 minutes until vegetables soften and release their fragrance.
- Step 2: Stir in 1/4 cup chopped cilantro, 1 tsp ground cumin, 1/2 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Cook for 1 minute until aromatics are fragrant.
- Step 3: Add 1 lb shrimp to the skillet, stirring to coat. Cook for 3-4 minutes until shrimp turn pink and opaque.
- Step 4: Heat 1 tbsp olive oil in a separate skillet over medium heat. Add plantain slices and cook for 5 minutes per side until golden brown and caramelized.
- Step 5: Serve shrimp sofrito over caramelized plantain slices, spooning extra sauce over top.
