Simmered French Lentil Soup with Garlic and Thyme

- 1 cup French green lentils
- 4 cups Vegetable broth
- 1, diced Yellow onion
- 2 cloves, minced Garlic
- 1 tbsp, chopped Fresh thyme
- 2 tbsp Extra-virgin olive oil
- 1 tsp Kosher salt
- 1/4 tsp Black pepper
- 2 tbsp, chopped Fresh parsley
Instructions
- Step 1: Heat 2 tbsp extra-virgin olive oil in a large pot over medium heat until shimmering. Add 1 diced yellow onion and cook for 5 minutes until translucent and starting to soften, stirring occasionally.
- Step 2: Add 2 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent burning.
- Step 3: Add 1 cup French green lentils, 4 cups vegetable broth, 1 tbsp chopped fresh thyme, 1 tsp kosher salt, and 1/4 tsp black pepper. Bring to a gentle simmer, cover, and cook for 30-35 minutes until lentils are tender but hold their shape.
- Step 4: Remove from heat, stir in 2 tbsp chopped fresh parsley, and let sit for 5 minutes to meld flavors before serving.
