Simmered Shrimp in Coconut Lime Sauce

Ingredients
- 1 lb (450g), peeled and deveined Shrimp
- 13.5 oz (400ml) Coconut milk
- 2, juiced (3 tbsp) Lime
- 1/2 cup, finely chopped Onion
- 4 cloves, minced Garlic
- 1 inch piece, minced Ginger
- 1, finely chopped Green chilies
- 1/2 tsp Turmeric powder
- 1/2 tsp Coriander powder
- 1/2 tsp Salt
- 1 tbsp Oil
Instructions
- Step 1: Heat 1 tbsp oil in a skillet over medium heat. Add 1/2 cup chopped onion and cook for 3 minutes until soft.
- Step 2: Add 4 minced garlic cloves, 1 inch minced ginger, and 1 chopped green chili; cook for 2 minutes until fragrant.
- Step 3: Stir in 1/2 tsp turmeric powder and 1/2 tsp coriander powder; cook for 1 minute until aromatic.
- Step 4: Add 450g shrimp and cook for 2 minutes until they turn pink.
- Step 5: Pour in 400ml coconut milk and 3 tbsp lime juice; stir to combine.
- Step 6: Bring to a gentle simmer and cook for 5 minutes until shrimp are fully cooked and sauce has thickened slightly.
- Step 7: Season with 1/2 tsp salt and simmer for 1 more minute.
- Step 8: Serve hot.
