Simmered Yellow Lentil Soup with Cumin

Ingredients
- 1 cup, rinsed yellow lentils
- 4 cups vegetable broth
- 1 large, finely chopped onion
- 2 cloves, minced garlic
- 1-inch, grated ginger
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1/4 tsp red chili powder
- 2 tbsp olive oil
- 2 cups, chopped spinach
- to taste salt
- 2 lemon wedges
Instructions
- Step 1: Heat 2 tbsp olive oil in a pot over medium heat. Add 1 tsp cumin seeds and cook for 30 seconds until fragrant.
- Step 2: Add 1 large onion, finely chopped, and cook for 5 minutes until golden brown.
- Step 3: Add 2 cloves garlic, minced, and 1-inch ginger, grated, and cook for 1 minute until fragrant.
- Step 4: Stir in 1/2 tsp turmeric and 1/4 tsp red chili powder, cook for 30 seconds until aromatic.
- Step 5: Add 1 cup yellow lentils, rinsed, and 4 cups vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
- Step 6: Stir in 2 cups spinach, chopped, and cook for 2 minutes until wilted.
- Step 7: Season with salt to taste. Serve with lemon wedges.
