  1. Step 1: Heat 2 tbsp olive oil in a pot over medium heat. Add 1 tsp cumin seeds and cook for 30 seconds until fragrant.
  2. Step 2: Add 1 large onion, finely chopped, and cook for 5 minutes until golden brown.
  3. Step 3: Add 2 cloves garlic, minced, and 1-inch ginger, grated, and cook for 1 minute until fragrant.
  4. Step 4: Stir in 1/2 tsp turmeric and 1/4 tsp red chili powder, cook for 30 seconds until aromatic.
  5. Step 5: Add 1 cup yellow lentils, rinsed, and 4 cups vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are tender.
  6. Step 6: Stir in 2 cups spinach, chopped, and cook for 2 minutes until wilted.
