Simple Onion and Cheese Pinwheels

Ingredients
- 1 sheet, thawed puff pastry
- 1 medium, finely chopped onion
- 1 tbsp butter
- 1/4 cup, shredded cheddar cheese
- 1/4 cup, shredded mozzarella cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1, beaten egg
Instructions
- Step 1: Preheat oven to 375°F. Unroll puff pastry onto a lightly floured surface and cut into 12 equal rectangles.
- Step 2: Heat 1 tbsp butter in a small skillet over medium heat. Add 1 medium finely chopped onion and cook for 5-7 minutes until soft and golden, stirring occasionally.
- Step 3: Stir in 1/4 cup shredded cheddar cheese, 1/4 cup shredded mozzarella cheese, 1/4 tsp salt, and 1/4 tsp black pepper. Cook for 1 minute until cheese is melted.
- Step 4: Place one puff pastry rectangle on a cutting board. Spread 1 tablespoon of the onion cheese mixture evenly over it, leaving a 1/4-inch border around edges.
- Step 5: Roll up the pastry from the long side, starting with the edge closest to you, to form a pinwheel. Place seam-side down on a parchment-lined baking sheet.
- Step 6: Brush pinwheels with 1 beaten egg. Bake for 15-18 minutes until golden brown and puffed.
