Instructions
- Step 1: Preheat oven to 300°F. Rub 4 lbs bone-in pork shoulder all over with 3 tbsp olive oil, 2 tsp salt, and 1 tsp black pepper. Insert 6 smashed garlic cloves and 4 sprigs each of fresh rosemary and thyme into slits made throughout the meat.
- Step 2: Place pork shoulder in a roasting pan and roast uncovered for 4 hours, basting every hour with pan juices, until the meat is tender and falls apart easily.
- Step 3: Remove pork from pan and tent with foil to rest. Pour pan drippings into a saucepan, add 1 cup dry white wine and 2 cups chicken broth, and simmer over medium heat for 10 minutes until the sauce reduces and thickens slightly.
- Step 4: Slice or shred pork, serve with the garlic and herb jus spooned over the top.
