Slow-Simmered Vegetable Soup with Lemon and Thyme

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 diced medium onion and cook for 5 minutes until translucent.
  2. Step 2: Add 2 diced medium carrots, 2 finely chopped celery stalks, and 1 diced medium zucchini. Cook for 5 minutes, stirring occasionally.
  3. Step 3: Stir in 4 cups vegetable broth, 2 tsp fresh chopped thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer and cook for 20 minutes.
  4. Step 4: Add 1 cup halved cherry tomatoes and cook for 5 minutes until vegetables are tender.
