Slow-Simmered White Bean Soup

Ingredients
- 1 can (15 oz), drained and rinsed white beans
- 1 cup chicken broth
- 1, diced carrot
- 1 stalk, diced celery
- 1/2, diced onion
- 2 cloves, minced garlic
- 1/2 tsp dried thyme
- 1/4 tsp dried rosemary
- to taste salt
- to taste black pepper
- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Heat 1 tbsp olive oil in a medium pot over medium heat. Add 1/2 diced onion, 1 diced carrot, and 1 diced celery stalk, and cook for 5 minutes until softened.
- Step 2: Add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Stir in 1 can white beans (drained and rinsed), 1 cup broth, 1/2 tsp dried thyme, 1/4 tsp dried rosemary, and salt and black pepper to taste. Bring to a gentle simmer.
- Step 4: Cover and simmer for 20 minutes, stirring occasionally, until the vegetables are tender.
- Step 5: Stir in 2 tbsp chopped fresh parsley and serve hot.
