- 2 lbs, halved baby potatoes
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 2 tbsp, chopped fresh chives
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Place 2 lbs halved baby potatoes in a single layer on a baking sheet.
- Step 2: Drizzle 3 tbsp olive oil over the potatoes, then sprinkle with 4 minced garlic cloves, 1 tsp salt, and 1/2 tsp black pepper. Toss to coat evenly.
- Step 3: Use a fork to gently smash each potato half, flattening them slightly to create a crispy surface.
- Step 4: Roast for 25-30 minutes until golden brown and crispy around the edges, then sprinkle with 2 tbsp chopped fresh chives.
