  2. Step 2: Drizzle 3 tbsp olive oil over the potatoes, then sprinkle with 4 minced garlic cloves, 1 tsp salt, and 1/2 tsp black pepper. Toss to coat evenly.
  3. Step 3: Use a fork to gently smash each potato half, flattening them slightly to create a crispy surface.
  4. Step 4: Roast for 25-30 minutes until golden brown and crispy around the edges, then sprinkle with 2 tbsp chopped fresh chives.
