Smoky Lemon-Glazed Salmon with Roasted Sweet Potatoes

Ingredients
- 4 (5 oz each) salmon fillets
- 2 tbsp avocado oil
- 1/2 tsp smoked paprika
- 1, zested and juiced lemon
- 2 medium (12 oz), diced 1/2-inch sweet potatoes
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Place diced sweet potatoes on a sheet pan, drizzle with 1 tbsp avocado oil, and sprinkle with 1/4 tsp sea salt and 1/8 tsp black pepper. Toss to coat.
- Step 2: Place salmon fillets on a separate sheet pan. Drizzle with 1 tbsp avocado oil, then rub with smoked paprika, lemon zest, 1/4 tsp sea salt, and 1/8 tsp black pepper.
- Step 3: Roast sweet potatoes for 15 minutes, then add salmon to the oven. Continue roasting for 12-15 minutes, or until salmon flakes easily with a fork.
- Step 4: Squeeze lemon juice over salmon and serve immediately with roasted sweet potatoes.
