Sniper-Style Mushroom Risotto with Parmesan

Ingredients
- 1 cup arborio rice
- 6 oz mushrooms
- 1/4 cup shallot
- 1/2 cup white wine
- 3 cups vegetable broth
- 1/2 cup Parmesan cheese
Instructions
- Step 1: Finely chop 6 oz mushrooms and 1/4 cup minced shallot. Heat 2 tbsp of broth in a pot over medium heat, then sauté mushrooms and shallot until golden (5-6 minutes).
- Step 2: Add 1 cup arborio rice to the pot, stirring constantly for 1 minute until rice is slightly translucent.
- Step 3: Pour in 1/2 cup white wine, stirring until fully absorbed (about 2 minutes). Begin adding 3 cups vegetable broth, 1/2 cup at a time, stirring constantly until each addition is absorbed before adding more.
- Step 4: After 20 minutes of simmering, stir in 1/2 cup grated Parmesan cheese until melted and sauce coats the rice evenly, then remove from heat and let rest for 2 minutes.
