Instructions
- Step 1: Rinse 2 cups long grain white rice under cold water until the water runs clear; drain well.
- Step 2: Heat 3 tbsp olive oil in a large heavy-bottomed pot over medium heat. Add 1/2 cup sofrito and cook, stirring occasionally, for 3-4 minutes until fragrant and slightly thickened.
- Step 3: Stir in 1/2 cup tomato sauce, 1 tsp ground cumin, 1 1/2 tsp salt, and 1/2 tsp black pepper, cooking for another 2 minutes to combine flavors.
- Step 4: Add the drained rice to the pot, stirring to coat each grain in the sofrito mixture, cooking for 2 minutes to lightly toast.
- Step 5: Pour in 3 cups chicken broth and add 1 bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Step 6: After 15 minutes, add 1 can (15 oz) drained and rinsed black beans on top of the rice without stirring. Cover and cook for another 10 minutes, or until the rice is tender and liquid absorbed.
- Step 7: Remove from heat, discard the bay leaf, and gently fluff the rice and beans together with a fork. Garnish with 2 tbsp chopped fresh cilantro before serving.
