Soy-Glazed Chicken with Green Beans

  1. Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp rice vinegar, 1 garlic clove minced, and 1/2 tsp grated fresh ginger until the honey dissolves.
  2. Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Season 1 lb chicken thighs, cut into 1-inch pieces, with salt and black pepper. Add the chicken to the skillet and cook for 5-6 minutes per side until golden brown and cooked through.
  3. Step 3: Remove the chicken from the skillet and set aside. Add 1 lb green beans, trimmed and cut into 1-inch pieces, to the skillet. Cook for 5-7 minutes, stirring occasionally, until the beans are crisp-tender and slightly charred at the edges.
  4. Step 4: Return the chicken to the skillet and pour the soy glaze mixture over the top. Toss to coat the chicken and beans evenly. Cook for 2-3 minutes until the sauce thickens slightly and coats the chicken.
