Soy-Glazed Pork Tenderloin with Snap Peas and Ginger

  1. Step 1: Pat pork dry and season with salt and pepper. Heat 1 tsp sesame oil in a skillet over medium-high heat. Sear pork for 3 minutes per side until golden. Transfer to a plate.
  2. Step 2: Whisk soy sauce, rice vinegar, ginger, honey, and minced garlic in a bowl. Pour over pork in the skillet, bring to a simmer, and cook 5 minutes, spooning glaze over pork until thickened and glossy.
  3. Step 3: Add snap peas to skillet and cook 4 minutes until bright green and crisp-tender. Remove pork and peas from pan.
  4. Step 4: Spoon 1 tbsp pan sauce over cooked rice, then top with pork and snap peas. Serve immediately.
