  2. Step 2: Add 12 oz thinly sliced chicken thighs and cook for 5-6 minutes, stirring occasionally, until golden and cooked through.
  3. Step 3: Add 3 minced garlic cloves and 1 tbsp minced fresh ginger, stir-frying for 30 seconds until fragrant.
  4. Step 4: Stir in 1 bunch chopped bok choy and 2 sliced bell peppers, cooking for 3-4 minutes until vegetables are bright and tender-crisp.
  5. Step 5: Pour 3 tbsp coconut aminos over the mixture and stir to coat. Cook for 1 more minute, then season with 1/2 tsp black pepper.
