Stir-Fried Okra with Mustard Seeds and Turmeric

- 2 cups okra
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/4 tsp cumin seeds
- 1/2 cup water
- 1 tbsp tamarind paste
- 1/4 tsp salt
- 1/4 cup cilantro
Instructions
- Step 1: Trim and slice 2 cups okra into 1/2-inch pieces. Heat 2 tbsp coconut oil in a large skillet over medium heat. Add 1 tsp mustard seeds and 1/4 tsp cumin seeds, and let them pop for 1 minute until aromatic.
- Step 2: Add the okra slices and stir-fry for 3 minutes until they begin to soften. Sprinkle 1/2 tsp turmeric powder over the okra and stir to coat evenly.
- Step 3: Add 1/2 cup water, 1 tbsp tamarind paste, and 1/4 tsp salt. Cover the skillet and cook for 10-12 minutes, stirring occasionally, until okra is tender. Uncover and cook for 1 more minute to thicken the sauce. Stir in 1/4 cup chopped cilantro before serving.
