Instructions
- Step 1: Rinse 1 cup jasmine rice in cold water until water runs clear. Combine rice and 1.5 cups water in a pot, bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes until water is absorbed and rice is fluffy.
- Step 2: Heat 2 tablespoons vegetable oil in a wok over medium-high heat until shimmering. Add 4 minced garlic cloves and 3 finely sliced bird’s eye chilies, stir-frying for 30 seconds until aromatic but not burnt.
- Step 3: Add 400 grams ground pork to the wok, breaking it apart with a spatula. Stir-fry for 5-7 minutes until pork is cooked through and starting to brown.
- Step 4: Stir in 2 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon oyster sauce, and 1 teaspoon white sugar. Cook for another 2 minutes until the sauce thickens slightly and coats the pork.
- Step 5: Turn off heat and fold in 1 cup fresh Thai basil leaves, stirring until wilted and fragrant.
- Step 6: Serve the spicy basil pork hot over the freshly steamed jasmine rice.
