Szechuan Beef Stir-Fry with Bell Peppers and Green Onions

Ingredients
- 12 oz, thinly sliced against the grain beef sirloin
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp, crushed Szechuan peppercorns
- 2 cloves, minced garlic
- 1 tbsp, minced ginger
- 2, sliced into thin strips bell peppers
- 4, sliced into 1-inch pieces green onions
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
Instructions
- Step 1: In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, 1/2 tsp crushed Szechuan peppercorns, 2 minced garlic cloves, and 1 tbsp minced ginger. Set aside.
- Step 2: Place 12 oz thinly sliced beef sirloin in a bowl and toss with 1 tbsp cornstarch until coated.
- Step 3: Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef and stir-fry for 2-3 minutes until browned but still tender, then remove and set aside.
- Step 4: Add 2 sliced bell peppers and 4 sliced green onions to the skillet, stir-frying for 2 minutes until crisp-tender.
- Step 5: Return the beef to the skillet, pour in the soy sauce mixture, and stir to coat. Cook for 1 more minute until the sauce thickens and coats the ingredients.
- Step 6: Drizzle with 1 tsp sesame oil and serve over 2 cups cooked rice.
