Taco-Style Black Bean and Corn Skillet

Ingredients
- 1 can (15 oz) black beans
- 1 cup corn kernels
- 1/2 cup red onion
- 1/2 cup bell pepper
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 cup salsa
- 2 tablespoons fresh cilantro
Instructions
- Step 1: Heat 2 tablespoons olive oil in a large skillet over medium heat. Dice 1/2 cup red onion and 1/2 cup bell pepper, then add to the skillet and cook for 5 minutes until softened.
- Step 2: Stir in 1 can (15 oz) black beans, rinsed and drained, 1 cup corn kernels, 1 teaspoon cumin, 1/2 teaspoon chili powder, and 1/4 teaspoon salt. Cook for 7 minutes, stirring occasionally.
- Step 3: Add 1/4 cup salsa and cook for 2 more minutes until heated through. Remove from heat and stir in 2 tablespoons fresh cilantro before serving.
