Tarragon-Parmesan Pasta with Roasted Cherry Tomatoes

Ingredients
- 12 oz spaghetti
- 2 cups cherry tomatoes
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 2 tbsp, finely chopped fresh tarragon
- 1/2 cup, finely grated Parmesan cheese
- 1 tsp kosher salt
- 1/2 cup pasta water
Instructions
- Step 1: Preheat oven to 425°F. Toss cherry tomatoes with 1 tbsp olive oil and 1/4 tsp salt on a baking sheet, then roast for 20 minutes until blistered and juicy.
- Step 2: Bring 4 quarts salted water to a rolling boil in a large pot. Add 12 oz spaghetti and cook for 8 minutes until al dente, then drain, reserving 1/2 cup pasta water.
- Step 3: Heat remaining 1 tbsp olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned.
- Step 4: Add drained spaghetti, roasted tomatoes, 1/4 cup reserved pasta water, 2 tbsp chopped tarragon, and 1/2 cup grated Parmesan to the skillet. Toss vigorously for 2 minutes until sauce coats strands and thickens slightly.
- Step 5: Season with additional salt to taste, then serve immediately with remaining tarragon.
