Tomato-Red Pepper Simmered Soup

Ingredients
- 1 cup chopped tomatoes
- 1 cup chopped red bell pepper
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1/2 cup, finely chopped onion
- 2 cloves, minced garlic
- 1/4 teaspoon dried thyme
- to taste salt
- 2 tablespoons, chopped fresh basil
Instructions
- Step 1: Heat 1 tablespoon olive oil in a medium pot over medium heat until shimmering. Add 1/2 cup finely chopped onion and 2 minced garlic cloves, stirring frequently for 3-4 minutes until onion is translucent and fragrant.
- Step 2: Add 1 cup chopped tomatoes, 1 cup chopped red bell pepper, 2 cups vegetable broth, and 1/4 teaspoon dried thyme. Bring to a gentle simmer, then reduce heat to low.
- Step 3: Cover and simmer for 20 minutes, stirring occasionally, until vegetables are very tender and flavors meld. Season with salt to taste.
- Step 4: Remove from heat, stir in 2 tablespoons chopped fresh basil, and serve immediately.
