Vegetable and Herb Omelet

  2. Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium-low heat. Add 1/4 cup diced bell peppers and 1/4 cup diced onions, sautéing for 3-4 minutes until softened.
  3. Step 3: Pour egg mixture into skillet, tilting to spread evenly. Cook 2-3 minutes until edges set, then sprinkle with 2 tbsp chopped fresh chives.
