Vegetable and Herb Omelet

Ingredients
- 4 large eggs
- 1/4 cup, diced bell peppers
- 1/4 cup, diced onions
- 2 tbsp, chopped fresh chives
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Whisk 4 large eggs with 1/4 tsp salt and 1/4 tsp black pepper until well combined.
- Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium-low heat. Add 1/4 cup diced bell peppers and 1/4 cup diced onions, sautéing for 3-4 minutes until softened.
- Step 3: Pour egg mixture into skillet, tilting to spread evenly. Cook 2-3 minutes until edges set, then sprinkle with 2 tbsp chopped fresh chives.
- Step 4: Fold omelet in half and cook 1 minute more until fully set. Slide onto plate and serve immediately.
