Vegetarian Paprika Vegetable Stew

Ingredients
- 4 cups (carrots, potatoes, zucchini, bell peppers, diced) mixed vegetables
- 1, finely chopped onion
- 2 cloves, minced garlic
- 1.5 tbsp sweet paprika
- 2 cups vegetable broth
- 2 tbsp tomato paste
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp, chopped fresh thyme
Instructions
- Step 1: Heat olive oil in a large pot over medium heat. Add finely chopped onion and cook for 5 minutes until soft. Stir in minced garlic and sweet paprika, cooking for 1 minute until fragrant.
- Step 2: Add tomato paste and cook for 2 minutes, stirring constantly. Pour in vegetable broth, then add mixed vegetables, salt, and black pepper. Bring to a simmer.
- Step 3: Cover and cook on low heat for 25 minutes until vegetables are tender.
- Step 4: Stir in chopped fresh thyme and adjust seasoning. Serve hot as a main or side dish.
