Za'atar-Glazed Salmon with Roasted Carrots and Asparagus

Ingredients
- 4 (6 ounces each) salmon fillets
- 2 tablespoons za'atar spice blend
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 pound, sliced into 1/2-inch coins carrots
- 1 bunch, trimmed asparagus
- 3 cloves, minced garlic
- 1/2 teaspoon salt
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels, then rub 2 tablespoons za'atar, 1 tablespoon lemon juice, and 1 tablespoon olive oil over both sides.
- Step 2: Toss 1 pound sliced carrots, 1 bunch trimmed asparagus, 3 minced garlic cloves, 1 teaspoon salt, and 1 tablespoon olive oil on a baking sheet.
- Step 3: Place salmon fillets on top of the vegetables on the baking sheet.
- Step 4: Roast for 15-18 minutes until salmon is opaque and carrots are tender when pierced with a fork.
- Step 5: Let rest 5 minutes before serving directly from the baking sheet.
