Za'atar-Glazed Salmon with Roasted Carrots and Asparagus

  1. Step 1: Preheat oven to 400°F (200°C). Pat salmon fillets dry with paper towels, then rub 2 tablespoons za'atar, 1 tablespoon lemon juice, and 1 tablespoon olive oil over both sides.
  2. Step 2: Toss 1 pound sliced carrots, 1 bunch trimmed asparagus, 3 minced garlic cloves, 1 teaspoon salt, and 1 tablespoon olive oil on a baking sheet.
  3. Step 3: Place salmon fillets on top of the vegetables on the baking sheet.
  4. Step 4: Roast for 15-18 minutes until salmon is opaque and carrots are tender when pierced with a fork.
  5. Step 5: Let rest 5 minutes before serving directly from the baking sheet.
