Zucchini and Cheddar Fritters with Dill Yogurt Sauce

- 300g zucchini
- 56g cheddar cheese
- 30g all-purpose flour
- 1 large egg
- 15g fresh dill
- 1/4 tsp salt
- 1/8 tsp black pepper
- 30ml olive oil
- 120g plain yogurt
- 5g fresh dill
- 5ml lemon juice
Instructions
- Step 1: Grate 300g zucchini and squeeze out excess moisture using a clean kitchen towel. Combine in a bowl with 56g shredded cheddar, 30g flour, 1 large egg, 15g chopped dill, 1/4 tsp salt, and 1/8 tsp black pepper. Mix until evenly incorporated.
- Step 2: Heat 30ml olive oil in a non-stick skillet over medium heat until shimmering.
- Step 3: Form the mixture into 8 equal patties using a 1/4 cup measure. Place in the skillet and cook for 4 minutes per side until deep golden brown and crisp.
- Step 4: While fritters cook, whisk 120g plain yogurt, 5g chopped dill, and 5ml lemon juice in a small bowl until smooth and well combined.
