- 2 medium oranges
- 1 medium grapefruit
- 1/4 cup red onion
- 1/2 cup fennel bulb
- 1 teaspoon Aperol
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 tablespoon mint
Instructions
- Step 1: In a small bowl, whisk together 1 teaspoon Aperol, 2 tablespoons extra virgin olive oil, 1 tablespoon lemon juice, and 1/4 teaspoon salt until emulsified.
- Step 2: In a large bowl, combine 2 medium sectioned oranges, 1 medium sectioned grapefruit, 1/4 cup thinly sliced red onion, and 1/2 cup thinly sliced fennel bulb.
