Aquatic Center Citrus-Crusted Fish

Ingredients
- 6 oz salmon fillet
- 1 tbsp orange zest
- 1 tsp lemon juice
- 1/2 tsp paprika
- 1/4 cup cucumber
- 1 tbsp dill
- 2 tbsp plain yogurt
Instructions
- Step 1: Pat 6 oz salmon fillet dry with paper towels, then rub 1 tbsp orange zest, 1 tsp lemon juice, and 1/2 tsp paprika evenly over both sides.
- Step 2: Heat a non-stick skillet over medium-high heat and add a thin layer of oil. Place salmon skin-side down and cook for 4 minutes until golden brown.
- Step 3: Flip salmon and cook for 3 more minutes until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
- Step 4: While fish cooks, finely dice 1/4 cup cucumber and chop 1 tbsp fresh dill, mixing with 2 tbsp plain yogurt to create a cool sauce.
- Step 5: Serve fish immediately with a dollop of cucumber-dill sauce on the side, drizzling any pan juices over the top.
