Asparagus and Pea Stir-Fry with Ginger

Ingredients
- 1 lb, trimmed and cut into 1-inch pieces asparagus
- 1 cup fresh or frozen peas
- 2 tbsp vegetable oil
- 3 cloves, minced garlic
- 1 tbsp, minced ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp water
- 2 tbsp sesame seeds
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large wok over high heat until shimmering. Add 3 cloves minced garlic and 1 tbsp minced ginger, stir-frying for 30 seconds until fragrant but not browned.
- Step 2: Add 1 lb trimmed asparagus and 1 cup peas, stirring to coat in oil. Cook for 4 minutes until asparagus is tender-crisp and peas are bright green.
- Step 3: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sesame oil in a small bowl. Pour over vegetables and stir to coat. Combine 1 tbsp cornstarch with 2 tbsp water, then add to the pan, stirring constantly until sauce thickens and coats vegetables, about 1 minute.
- Step 4: Remove from heat and stir in 2 tbsp sesame seeds. Serve immediately while hot.
