- 2 ripe avocado
- 2 large cucumber
- 1/2 cup fresh dill
- 1/4 cup apple cider vinegar
- 1/2 cup water
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 cup red onion
Instructions
- Step 1: Peel and pit 2 ripe avocados, then chop 2 large peeled cucumbers into 1-inch pieces.
- Step 2: Place avocados, chopped cucumbers, 1/2 cup fresh dill, 1/4 cup apple cider vinegar, 1/2 cup water, 1/2 tsp sea salt, and 1/4 tsp black pepper in a blender.
- Step 3: Blend on low for 1 minute until smooth, scraping down sides once. Add 1/4 cup chopped red onion and blend for 30 seconds more.
- Step 4: Refrigerate soup for at least 30 minutes to chill and meld flavors.
- Step 5: Serve cold, garnished with extra fresh dill and a sprinkle of black pepper.
