Avocado & Kale Massaged Salad with Lemon-Tahini Dressing

Ingredients
- 4 cups kale
- 1 large avocado
- 1 lemon
- 2 tbsp tahini
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1 cup cherry tomatoes
- 1/4 cup shelled pumpkin seeds
Instructions
- Step 1: In a large bowl, place 4 cups chopped kale and massage with 1 tbsp lemon juice and 1/2 tsp sea salt for 2 minutes until leaves soften and darken.
- Step 2: Slice 1 large avocado and add to the bowl with 1 cup halved cherry tomatoes, then toss gently to combine.
- Step 3: Whisk 2 tbsp tahini, 1 tbsp olive oil, and the remaining lemon juice until smooth, then drizzle over salad and toss until evenly coated.
- Step 4: Sprinkle 1/4 cup shelled pumpkin seeds over the top just before serving.
