Bacon and Chicken Soup with Ranch-Style Dressing

- 6 slices bacon
- 1.5 pounds chicken thighs
- 1 medium yellow onion
- 3 cloves garlic
- 4 cups chicken broth
- 1/2 cup ranch dressing
- 1 tablespoon fresh dill
- 1 tablespoon fresh chives
Instructions
- Step 1: Cook 6 slices bacon in a large pot over medium heat until crisp, about 5 minutes. Remove bacon with a slotted spoon, leaving 2 tablespoons bacon fat in the pot.
- Step 2: Add 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch cubes, to the pot and cook for 4 minutes until browned on all sides.
- Step 3: Add 1 medium chopped yellow onion and 3 minced garlic cloves to the pot. Sauté for 3 minutes until onions are soft and fragrant.
- Step 4: Pour in 4 cups chicken broth and bring to a simmer. Reduce heat to low, cover, and cook for 15 minutes until chicken is tender.
- Step 5: Stir in 1/2 cup ranch dressing, 1 tablespoon chopped fresh dill, and 1 tablespoon chopped fresh chives. Cook for 2 minutes until heated through. Crumble 6 slices cooked bacon and sprinkle over each serving.
