Bacon and Spinach Casserole

Ingredients
- 6 slices chopped bacon
- 1 cup fresh chopped spinach
- 4 large eggs
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 tsp garlic powder
- pinch salt
- pinch black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cook 6 slices bacon in a skillet over medium heat until crisp, then remove and set aside, leaving 2 tbsp bacon fat in the skillet.
- Step 2: Add 1 cup fresh chopped spinach to the skillet with the bacon fat and cook for 2 minutes until wilted. Remove from heat.
- Step 3: In a bowl, whisk 4 large eggs, 1/2 cup heavy cream, 1/4 cup grated Parmesan cheese, 1/4 tsp garlic powder, and a pinch each of salt and black pepper. Stir in the cooked spinach and 3 tbsp of the cooked bacon.
- Step 4: Pour the mixture into a greased 8x8 inch baking dish. Top with the remaining bacon. Bake for 25-30 minutes, until set and lightly golden.
