Bacon and Spinach Casserole

  1. Step 1: Preheat oven to 375°F (190°C). Cook 6 slices bacon in a skillet over medium heat until crisp, then remove and set aside, leaving 2 tbsp bacon fat in the skillet.
  2. Step 2: Add 1 cup fresh chopped spinach to the skillet with the bacon fat and cook for 2 minutes until wilted. Remove from heat.
  3. Step 3: In a bowl, whisk 4 large eggs, 1/2 cup heavy cream, 1/4 cup grated Parmesan cheese, 1/4 tsp garlic powder, and a pinch each of salt and black pepper. Stir in the cooked spinach and 3 tbsp of the cooked bacon.
  4. Step 4: Pour the mixture into a greased 8x8 inch baking dish. Top with the remaining bacon. Bake for 25-30 minutes, until set and lightly golden.
