Baked Feta and Cherry Tomato Tartlets

Ingredients
- 1/2 cup almond flour
- 2 tbsp butter
- 4 oz feta cheese
- 1 cup cherry tomatoes
- 1 tsp olive oil
- 1/2 tsp dried oregano
- pinch salt
Instructions
- Step 1: Preheat oven to 350°F (175°C). Mix 1/2 cup almond flour with 2 tbsp melted butter until crumbly. Press into 6 greased muffin tin cups to form crusts.
- Step 2: Bake crusts for 8 minutes until golden. Remove and let cool slightly.
- Step 3: Slice 4 oz feta into thin pieces and arrange over crusts. Top with 1 cup cherry tomatoes, drizzle with 1 tsp olive oil, and sprinkle with 1/2 tsp dried oregano and a pinch of salt.
- Step 4: Return to oven and bake for 12-15 minutes until tomatoes are slightly softened and cheese is melted.
