Instructions
- Step 1: Preheat oven to 350°F (175°C). In a medium saucepan, combine 1 cup granulated sugar and 1/4 cup water over medium heat. Cook without stirring for 8-10 minutes until the sugar turns a deep amber color, swirling occasionally to prevent burning.
- Step 2: Immediately pour the caramel into a 9-inch round baking dish, swirling to coat the bottom evenly. Set aside to harden.
- Step 3: In a large bowl, whisk together 6 large eggs, 1 can (14 oz) sweetened condensed milk, 1 can (12 oz) evaporated milk, and 1 tsp vanilla extract until smooth and fully combined.
- Step 4: Pour the egg mixture gently over the set caramel in the baking dish.
- Step 5: Place the baking dish inside a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish to create a water bath.
- Step 6: Bake for 50-60 minutes until the quesillo is set but still slightly jiggly in the center.
- Step 7: Remove from oven and cool to room temperature, then refrigerate for at least 4 hours before unmolding.
- Step 8: To serve, run a knife around the edges and invert onto a serving plate so the caramel sauce drizzles over the custard.
