Canned Tomato and White Bean Soup

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 medium onion (diced), 2 carrots (diced), and 2 celery stalks (diced), and cook for 8 minutes until softened.
  2. Step 2: Add 3 minced garlic cloves and cook for 1 minute until fragrant.
  3. Step 3: Stir in 1 can (14.5 oz) diced tomatoes (with juice), 1 can (15 oz) white beans (drained and rinsed), 4 cups broth, 1 tsp dried oregano, and 1/2 tsp dried basil. Bring to a simmer.
  4. Step 4: Reduce heat to low, cover, and simmer for 20 minutes.
  5. Step 5: Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
