Cardamom-Scented Rice Pilaf with Citrus Zest

  1. Step 1: Rinse 2 cups long grain white rice under cold water until the water runs clear. Drain well.
  2. Step 2: Melt 3 tbsp butter in a large pot over medium heat. Add 1 large finely chopped onion and cook for 5 minutes until golden.
  3. Step 3: Add 1 tbsp crushed cardamom pods and cook for 1 minute until fragrant.
  4. Step 4: Stir in the rinsed rice and cook for 2 minutes, stirring to coat the rice in butter.
  5. Step 5: Add 1/4 cup chicken broth and 1/4 cup water, then bring to a simmer.
  6. Step 6: Cover the pot with a tight-fitting lid, reduce heat to low, and cook for 18-20 minutes until the rice is tender and liquid is absorbed.
  7. Step 7: Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork, stir in 1 tsp lemon zest, and season with salt to taste.
