Cauliflower-Herb Ground Beef Meatloaf

- 1.25 lbs ground beef
- 1 head, riced cauliflower
- 1 large egg
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp garlic powder
- 2 tbsp coconut aminos
Instructions
- Step 1: Preheat oven to 375°F. In a bowl, combine 1.25 lbs ground beef, 1 riced cauliflower head, 1 large egg, 1 tsp dried thyme, 1 tsp dried rosemary, 1 tsp garlic powder, and 2 tbsp coconut aminos. Mix gently with hands until evenly distributed, avoiding overmixing.
- Step 2: Transfer mixture to a parchment-lined loaf pan, pressing firmly into an even 1-inch-thick rectangle. Smooth the top with a spatula.
- Step 3: Bake for 45 minutes until the internal temperature reaches 160°F and the surface is lightly browned. Let rest 10 minutes before slicing to retain juices.
