Chopped Herb and Heirloom Tomato Salad with Balsamic Vinaigrette

Ingredients
- 2 cups, chopped Heirloom tomatoes
- 1/2, diced Cucumber
- 1/4 cup, finely chopped Red onion
- 1/4 cup, chopped Fresh basil
- 2 tbsp, chopped Fresh parsley
- 2 tbsp Balsamic vinegar
- 3 tbsp Olive oil
- 1 tsp Dijon mustard
- 1 tsp Honey
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Step 1: In a large bowl, combine 2 cups chopped heirloom tomatoes, 1/2 diced cucumber, and 1/4 cup finely chopped red onion; toss gently.
- Step 2: In a small jar, add 2 tbsp balsamic vinegar, 3 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey, 1/4 tsp salt, and 1/8 tsp black pepper. Seal the jar and shake vigorously for 30 seconds until emulsified.
- Step 3: Pour the dressing over the tomato mixture and toss to coat evenly. Sprinkle with 1/4 cup chopped fresh basil and 2 tbsp chopped fresh parsley just before serving.
