  1. Step 1: In a large bowl, combine 2 cups chopped heirloom tomatoes, 1/2 diced cucumber, and 1/4 cup finely chopped red onion; toss gently.
  2. Step 2: In a small jar, add 2 tbsp balsamic vinegar, 3 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey, 1/4 tsp salt, and 1/8 tsp black pepper. Seal the jar and shake vigorously for 30 seconds until emulsified.
  3. Step 3: Pour the dressing over the tomato mixture and toss to coat evenly. Sprinkle with 1/4 cup chopped fresh basil and 2 tbsp chopped fresh parsley just before serving.
