Cilantro-Lime Chicken with Sweet Corn and Black Beans

Ingredients
- 1.2 lbs, cut into 1-inch pieces chicken breasts
- 3 tbsp fresh lime juice
- 1/4 cup, chopped fresh cilantro
- 2 cloves, minced garlic
- 2 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 cup sweet corn kernels
- 1 can (15 oz), rinsed and drained black beans
- 1/4 cup, thinly sliced red onion
Instructions
- Step 1: In a bowl, whisk together 3 tbsp fresh lime juice, 2 tbsp olive oil, 1/4 cup chopped cilantro, 2 minced garlic cloves, 1 tsp cumin, 1/2 tsp chili powder, 1/2 tsp salt, and 1/4 tsp black pepper. Add 1.2 lbs chicken breast pieces and marinate for 30 minutes.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 5-6 minutes per side until golden and cooked through. Set aside.
- Step 3: In the same skillet, add 1 cup sweet corn kernels and 1 can rinsed black beans. Pour in reserved marinade and simmer for 5 minutes until slightly thickened and fragrant. Return chicken to skillet, toss to coat, and cook for 2 more minutes until heated through.
