Colcannon with Smoked Gouda and Chives

Ingredients
- 2 lbs, peeled and cut into 1-inch cubes potatoes
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1 cup, shredded green cabbage
- 1/4 cup, finely chopped chives
- 1/2 cup, shredded smoked Gouda cheese
- to taste salt
- to taste black pepper
Instructions
- Step 1: Place 2 lbs peeled potato cubes in a pot, cover with cold water, and add a pinch of salt.
- Step 2: Bring to a boil over high heat, then reduce to medium and simmer 15-20 minutes until potatoes are very tender.
- Step 3: Drain potatoes and return to pot.
- Step 4: Add 1/4 cup unsalted butter and 1/2 cup milk, then mash until smooth and creamy.
- Step 5: Stir in 1 cup shredded green cabbage, 1/4 cup chopped chives, and 1/2 cup shredded smoked Gouda cheese.
- Step 6: Continue mashing for 2 minutes until cabbage wilts and cheese melts completely.
- Step 7: Season with salt and pepper to taste and serve warm.
