  1. Step 1: Heat 1 tbsp olive oil in a pot over medium heat. Sauté 1/4 cup diced onion and 2 minced garlic cloves for 3 minutes until soft.
  2. Step 2: Add 1 large chopped cauliflower head and cook for 5 minutes, stirring occasionally.
  3. Step 3: Pour in 2 cups chicken broth, bring to a simmer, and cover. Cook for 15 minutes until cauliflower is fork-tender.
  4. Step 4: Remove from heat. Stir in 1 medium pitted avocado, 1/4 cup heavy cream, 1/2 tsp salt, and 1/4 tsp black pepper.
