Creamy Avocado-Cauliflower Soup

Ingredients
- 1 large head, chopped Cauliflower
- 1 medium, pitted Avocado
- 2 cups Chicken broth
- 1/4 cup Heavy cream
- 1/4 cup, diced Onion
- 2 cloves, minced Garlic
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a pot over medium heat. Sauté 1/4 cup diced onion and 2 minced garlic cloves for 3 minutes until soft.
- Step 2: Add 1 large chopped cauliflower head and cook for 5 minutes, stirring occasionally.
- Step 3: Pour in 2 cups chicken broth, bring to a simmer, and cover. Cook for 15 minutes until cauliflower is fork-tender.
- Step 4: Remove from heat. Stir in 1 medium pitted avocado, 1/4 cup heavy cream, 1/2 tsp salt, and 1/4 tsp black pepper.
- Step 5: Blend with an immersion blender until completely smooth. Return to low heat for 2 minutes to warm through, adjusting salt to taste.
