Crisp-Crust Chicken Thighs with Lemon-Garlic Butter

Ingredients
- 4 bone-in skin-on chicken thighs
- 2 tablespoons olive oil
- 3 minced garlic cloves
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Step 1: Pat 4 bone-in skin-on chicken thighs dry with paper towels and season evenly with 1 teaspoon salt and 1/2 teaspoon black pepper.
- Step 2: Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs skin-side down and cook for 8-10 minutes without moving, until skin is deep golden and crispy.
- Step 3: Flip chicken and cook for 6-8 minutes more, or until internal temperature reaches 165°F (74°C).
- Step 4: Remove chicken from skillet and set aside. Pour out excess oil, leaving 1 tablespoon in the skillet.
- Step 5: Add 3 minced garlic cloves and 1 tablespoon fresh thyme leaves to the skillet, cooking for 1 minute until fragrant.
- Step 6: Stir in 2 tablespoons butter and 1 tablespoon lemon juice until butter melts and sauce thickens slightly. Return chicken to skillet, coating in sauce, and cook for 1 minute more.
