  1. Step 1: Pat chicken thighs dry with paper towels. Season both sides with salt and pepper.
  2. Step 2: Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and cook for 8-10 minutes until skin is golden and crispy, then flip and cook for 2 minutes.
  3. Step 3: Remove chicken and set aside. Add 2 minced garlic cloves and 2 tbsp fresh thyme to the skillet, sautéing for 30 seconds until fragrant.
  4. Step 4: Add 1 cup cherry tomatoes, 1 cup baby carrots, and 1/2 cup chicken broth to the skillet, stirring to combine. Return chicken to skillet, nestling lemon slices around the chicken.
  5. Step 5: Transfer skillet to a preheated oven at 400°F and bake for 20-25 minutes until chicken is cooked through and vegetables are tender.
