Instructions
- Step 1: Preheat oven to 425°F. Pat dry 1 whole chicken (about 4 pounds) with paper towels. Gently loosen skin over breasts and thighs.
- Step 2: In a small bowl, mix 4 tbsp softened unsalted butter with 6 minced garlic cloves, 1 tsp black pepper, and 1 tbsp chopped fresh thyme leaves from 6 sprigs. Rub this mixture evenly under the skin and over the outside of the chicken.
- Step 3: Season the outside of the chicken generously with 2 tsp salt. Stuff the cavity with 1 halved lemon and remaining thyme sprigs.
- Step 4: Drizzle 2 tbsp olive oil over the chicken and place it breast-side up on a rack in a roasting pan.
- Step 5: Roast for 1 hour 15 minutes, occasionally basting with pan juices. When done, juices should run clear and internal temperature should reach 165°F.
- Step 6: Remove chicken from oven and transfer to a cutting board. Pour 1/2 cup chicken broth into the pan and scrape up browned bits, then spoon pan juices over sliced chicken before serving.
